Choco-nutty porridge…

…mmm! This morning I woke up and was craving bananas. I made this recipe up and I hope you guys like it too! 

Ingredients to serve one

1 banana, sliced

1/4 cup porridge oats

3/4 - 1 cup water

1 tablespoon of chocolate and nut spread OR 2 teaspoons peanut butter and 2 teaspoons chocolate spread

1 tablespoon agave syrup

Cook away!

1. Put your oats and water into a saucepan and heat until oats are cooked and it is thick…about 7-10 minutes depending how thick you like it.

2. Add the agave and choconut spread into the mix. Stir until well combined.

3. Put into a bowl and place the chopped bananas on top.

4. Revel in the fact that you are eating chocolate for breakfast =)

Beautifully simple bagel breakfast!

So, last week I was at work and couldn’t be bothered to cook much. I realised New York Bagels are vegan friendly and picked up a pack of cinnamon and raisin ones…*drool*! 

Anyway…I won’t bore you with a recipe because, frankly….it’s just cutting it up, toasting it and slapping some jam and peanut butter on it, but dayamn! It taste FINE.

Toast (I did mine under the grill on just one side as I like it squishy):

Spread (I used chunky peanut butter and strawberry jam):

Mum’s Beany Breadcrumb Pie…

…made vegan! I wanted something quick and easy for dinner tonight and recalled in a distant memory that my Mum made this lovely bean and breadcrumb concoction. I called her up and she told me what she did and so I adapted it. It ain’t pretty…but it’s what is on the inside that counts! It’s lovely comfort food and very filling…the crunchiness of the celery with the rest works so well! Enjoy!

Ingredients for one very hungry person

1/2 can of ratatouille

1/2 can BBQ baked beans

4-6 tablespoons instant breadcrumbs

 2 sticks celery, cut up into small chunks

1 tablespoon non-dairy margarine

1 tablespoon crunchy peanut butter

 How do I make this simple masterpiece?!

1. Turn the oven on to 180’c.

2. Put celery, beans and ratatouille into a small all metal saucepan that will go into the oven. Heat up until very hot, about 5-10 minutes. 

3. Put a layer of breadcrumbs on the top.

4. Melt the peanut butter and margarine in a saucepan until liquid, then put on top of the breadcrumbs. If it is too thick, feel free to add a bit of water into the mix, too.

5. Put in the oven for half an hour…it’ll look something like this!

6. Serve! Works best in bowls, I think.
